Blueberry Pineapple Smoothie Bowls + Healthy links

In college when people use to tell me that they drink smoothies in the morning I would think to myself, yeah right, they just say they drink smoothies to sound cool and healthy but really they’re eating Eggo’s and Jimmy Dean’s. Since I had my fair share of smoothies from Planet Smoothie that were made entirely out of sherbet and fruit in sugar syrup, I never really thought they could be an alternative to a meal and full of health benefits.

Now I’ve changed my outlook and have most definitely turned into one of those people I scoffed at in college. After a long weekend of eating heavy foods, it always feels so good to wake up on a weekday morning and nibble on something light and refreshing. There’s an amazing cafe and spa in NW Portland called Kiva. They have these incredible acai smoothie bowls which inspired me to make something similar at home. It’s a little thicker so you can eat with a spoon which I love! You would never know how much spinach is in this bowl since it’s masked with sweet pineapple and blueberries! My favorite crunchy things to add is roasted coconut, pumpkin seeds, and flax seeds but you can add any of your favorite toppings. Maybe even a little dark chocolate if you’re feelin’ crazy?

Blueberry Pineapple Smoothie Bowls
 Ingredients
-1 big handful of baby spinach leaves
-1 1/2 cups (350 ml) frozen blueberries
-1 cup (230 ml) frozen pineapple
-1 cup (230 ml) of apple juice (add more apple juice or add ice depending how thin or thick you want your bowl)
-Any extra supplements that you want to add! I put in a spoon of chia seeds and a spoon of coconut oil) When the coconut oil blends with something cold it turns into little beads and I love it in smoothies!
-For serving: Fresh blueberries, chopped pineapple, flax seeds, roasted coconut chips, and pumpkin seeds. Put whatever you have in your pantry! 
 

what to do
-Blend spinach, frozen blueberries, frozen pineapple, and apple juice in a blender until smooth. Add ice or more frozen fruit if you want it thicker or apple juice if you want it thinner. Blend in any other supplements that you want such as the chia seeds and coconut oil
-Top with chopped pineapple, fresh blueberries,  pumpkin seeds, roasted coconut, and flax seeds
