Happy Monday Friends!!
Normally I post Weekly Crumbs on Sundays, but we were far too busy yesterday riding our new longboards that Thomas surprised me with around Portland! That sounds way cooler than we actually looked 😂 We were pretty wobbly at first, but we eventually got the hang of it and were cruising all around the waterfront. When you’re craving a norwegian summer but can’t be there
Then make an open-faced sandwich! Last summer when my whole family went to Norway to visit Thomas’ family we ate soo much delicious seafood. My favorite typical summer Norwegian meal is white bread topped with sweet shrimp, a squeeze of lemon, and a little mayo. It sounds simple but it’s AMAZING. The shrimp in Norway are unlike any I have ever had. The heads are still on, you break off the head and suck the deliciousness out. Grossed out? Don’t knock it til’ you try it! It’s hard to find those shrimp here, but we made open-faced shrimp sandwiches this weekend with little shrimp we bought at Fred Meyer and it was such a great lunch!

Then start watching The Staircase. If you liked Making a Murderer then this documentary series will definitely be up your ally. It follows the trial of Michael Peterson accused of murdering his wife Kathleen. It looks like she had an accident by falling down the stairs, but then all of these little secrets start coming out!
When you’re throwing a bachelorette party
Go to Austin!! My good friend Danni is getting married in September and we are heading to Austin on Thursday for her Bach party. I am so excited – I’ve never been! We have all day on Sunday to explore with no plans so I need to hear all of your favorite spots!
If you want a kitchen tool that does everything for you
Then buy a Vitamix! We are seriously obsessed. We bought the new A3500 a couple of weeks ago from Williams Sonoma and have been using it for EVERYTHING. Soup, ice-cream, making smoothies, blending sauces, hummus, pesto – literally everything.
And last but not least, recipes I’m loving from the week!

Riding longboards sounds like so much fun. The weather is perfect now for that kind of adventure. The bread in that picture is totally making me hungry, by the way!
Ken’s bakery is right next to my apartment, so you can imagine how I feel every time I walk by this bread in the window! 🙂
Vitamix is the best! I worked at a berry farm one summer and made thousands of milkshakes using a vitamix, I have wanted one ever since!
That open faced sandwich sounds amazing too.

A Vitamix is a game changer! I use mine on a daily basis, sometimes even more than once a day depending on what’s on the menu.

austin is the BEST PLACE for a bachelorette/girls weekend. I just went for the first time as well this past year. The foods amazing! The drinks are amazing! The shopping (especially Congress St.) is irresistible. I totally want to go back. You are gonna go nutz!
