Happy Sunday!
I’ve fallen in a deep rabbit hole of looking at dreamy Cape Cod photos and pondering how many lobster rolls it’s possible to eat in one weekend 🦞 a friend of mine mentioned going to the Cape for a little getaway in September and now I’m obsessing. I think travel in the near future will look a lot more like cozy and quiet airbnb retreats with small groups of people and less crowded destinations which I’m 100% onboard with. I’m sure a lot of you are on the same boat where you are just ready to get out an about – here’s some safe travel ideas that are already on my bucket list!
Travel
– Renting a caravan and driving through Lofoten in the north of Norway. I told Thomas we have to do this with our families someday, but you can do this so many places across the world. The U.S. has so many incredible national parks that would be awesome for a camping road trip in a caravan!
– Rent an airbnb for two or a small group and head to the beach! I’m excited to stay somewhere coastal that I’ve never been like Cape Cod, but here’s a list of the 25 greatest beach towns from east to west coast!
– I’m always down to camp, but sometimes you just need a little glamp getaway – check out glampinghub.com for a ton of unique places to book!
Reading & Watching
I finally finished Heartburn by Nora Ephron, it was lighthearted and an easy read. I loved her dry humor  – if you’re looking for a quick beach read than this is it! Now I’ve moved on to Verity which looks like such a good creepy thriller which is my kind of speed! I’ve been following along with what BevCooks is reading in her “imaginary” book club and she hasn’t steered me wrong yet! I think it’s hilarious that she calls it imaginary because like me and a lot of others that follow her blog, we are all reading along with her so it’s definitely a full fledged book club!
You have to watch David Foster: Off the Record on Netflix! I thought it would be boring but it was so interesting. He discovered stars like Celine Dion, Michael Bublé, and wrote so many hit songs that you would never have known he wrote. I also watched The Last Dance, the Michael Jordan doc, and absolutely loved it. He literally changed the sports culture for the world!
What’s cookin’
For our wedding we got a meat grinder attachment for our kitchen aid and it’s the best! We love grinding lamb and making lamb burgers or topping flatbreads.
For this flatbread: make tzatziki with greek yogurt, grated cucumber, minced garlic, and a little salt to taste. Brown ground lamb with cumin, salt and pepper. Finish with a fresh topping! I chopped fresh mint, parsley, and golden raisins for sweetness and mixed that together with a little extra virgin olive oil. Â Voila! My perfect kind of weekend meal.
We also had leftover dough and made more pizza which I’m of course always happy about. If you want a great pizza dough recipe, check out my post from this last week!

I loved when we went to Maine and had Lobster 🦞 night after night. I was the only one wrapped in a bib. The others didn’t want any. The lobster rolls we’re assume as well. I could go back in a heart beat.
