To make the honey syrup - combine 1 cup of honey and 1 cup of water in a small sauceman over medium heat and stir until honey is dissolved. Remove from heat and let it cool down to room temperature. Transfer it to the glass jar and you can store it in the fridge for up to two weeks!
Combine aquavit, lemon juice, and simple syrup in a shaker, add ice, and shake well!
Strain into a flute or coupe glass, top with prosecco, and garnish with lemon peel and star anise.
