Raspberry Elderflower Gin and Tonic

This sweet floral spin on a classic cocktail will have you swooning for Valentine's Day!


  • 2 oz Hendricks Gin
  • 1 oz raspberry simple syrup
  • 3-4 oz elderflower Fever-Tree Tonic
  • ice


  • Make the raspberry simple syrup: mix 3/4 cup water, 3/4 sugar, and 6 oz package of raspberries in a small saucepan and bring to a simmer over medium heat. Once bubbles appear, turn down to low and simmer for 5 minutes. Add the mixture in a blender, blitz it for a few seconds, and then pour through a mesh strainer. Let cool
  • Fill your cocktail glass with ice, add in 2 oz of gin, 1 oz of rasberry simple syrup or more for sweetness, elderflower tonic water, and give a good stir. Or you can add ingredients to a coktail shaker and pour over ice! Top with fresh rasberries or garnish with a flower garnish.
